Ever since I fell in love with the Carolina Reuben sandwich at a downtown shop in Columbia many moons ago, I try to incorporate this fantastic idea anywhere I can. If you’re wondering what a Carolina Reuben is, it’s a southern take on a classic Reuben. However, instead of sauerkraut and corned beef, it’s turkey and coleslaw with swiss cheese and Thousand Island dressing.
This is my favorite way to share this recipe with party-goers instead of making 35 full size sandwiches. Ain’t nobody got time for that, especially if you’re trying to party with your people. Plus, it’s easier to eat 8 of these at a time when they’re small…
Carolina Reuben Pinwheels
3 extra large tortillas (burrito size)
4 oz. cream cheese, softened
1/3 cup thousand island dressing
18 slices deli turkey
12 slices swiss cheese
1 1/2 cups coleslaw (prepared or homemade, recipe below)
In a small mixing bowl, combine cream cheese and thousand island dressing. Using an electric mixer, beat at medium speed for about 2 minutes until mixture is well-blended (there will still be some small lumps). Set aside. Microwave tortillas for 15-20 seconds, this makes them soft and easy to maneuver. Slice about 1 inch off two opposite sides of tortilla. Spread 1/3 of dressing mixture on top of tortilla. Place 6 turkey slices on top of dressing mixture, followed by 4 slices of swiss cheese and top with 1/2 cup coleslaw. Spread the slaw into a thin layer.
Starting on one rounded end, roll up as tightly as you can. Place wax paper on cookie sheet. Put rolled tortilla on cookie sheet, seam side down. Continue process with next two tortillas. Store in refrigerator for at least two hours (or overnight). Then slice into 1 inch pieces. You can discard the uneven ends. Place on plate or serving tray and cover with plastic wrap and chill in refrigerator until ready to serve.
Simple Slaw
1 bag angel hair coleslaw
2/3 cup mayonnaise
1/2 teaspoon black pepper
In a medium bowl, stir together all ingredients until well combined. Serve immediately or store in refrigerator in airtight container until ready to serve.
