Butterscotch Brownies
A family heirloom brownie recipe made with melted butterscotch chips instead of chocolate, for a rich, chewy, caramel-toned bar.

This recipe belonged to my husband's grandmother, Nana, who we lost right before Christmas a couple years back. She lived a long, happy life surrounded by family, and she was famous for making sure there was always enough food to feed forty people, whether two or twenty showed up. A meal without dessert in her house was simply unheard of.
Every Christmas, the whole family piled in for one of her massive lunches, and these butterscotch brownies were always on the dessert table — one of my husband's favorites growing up. When our kitchen was finally back in working order after a long renovation, this was the first thing he asked me to make for him.
It felt so good to get back to baking just because I wanted to, not because I had to. These come together fast and freeze beautifully, so I always keep a stash wrapped up for when he gets a craving.
Ingredients
- 12 oz. bag butterscotch chips
- 1/2 cup unsalted butter
- 2 cups light brown sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons sea salt
- 4 eggs
- 2 teaspoons vanilla extract
Instructions
- 1Preheat the oven to 350 degrees. Combine the flour, baking powder, and salt in a small bowl and set aside.
- 2Melt the butterscotch chips and butter together in the microwave in 30-second intervals, stirring between each, until smooth. Transfer to a mixing bowl, add the brown sugar, and beat at medium speed until well combined.
- 3Add the eggs and vanilla, and beat just until combined. Add the dry ingredients and beat again, just until combined.
- 4Line a 9x13 inch pan with parchment paper, letting the edges hang over the sides, and coat with cooking spray. Spread the batter evenly into the pan.
- 5Bake for 25-30 minutes. Cool completely on a rack, then lift out using the parchment overhang and cut into squares.
Storage & Reheating
Freezer instructions: once cooled and cut, wrap each brownie individually in plastic wrap and store in a freezer bag for up to 3 months.
