Oreo Cheesecake Cookie Tarts

Individual cheesecakes baked right on top of an Oreo cookie crust, topped with an Oreo cream cheese icing and a mini Oreo — impossible to eat just one.

People ask me all the time, "How do you not eat everything you make?" Usually the honest answer is that I'm just used to being around it. This particular dessert was the exception — I found myself standing in front of the open fridge staring at these tarts like an oasis in the desert, five separate times in ten minutes, trying to talk myself out of just one more.

I ran through every justification I could think of (it's Friday, I worked out a few days ago, there's an odd number so eating one evens it out) before finally wrapping them up and freezing them to take to my family for Easter. You better believe I still ate one before they left the house.

Ingredients

  • 12 Oreo cookies
  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup confectioners sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/3 cup heavy cream
  • 1/2 cup Oreo cookies, broken into chunks

For the Oreo Icing

  • 4 oz. cream cheese, softened
  • 1/4 cup Oreo crumbs
  • 4 oz. frozen whipped topping, thawed
  • Mini Oreo cookies, for garnish

Instructions

  1. 1Preheat the oven to 350 degrees. Place an Oreo cookie in the bottom of each cavity of two lined muffin pans.
  2. 2Beat the cream cheese and confectioners sugar together at medium speed for 1-2 minutes, until smooth and creamy.
  3. 3Add the egg, vanilla, and heavy cream, and continue mixing, then stir in the Oreo cookie chunks.
  4. 4Using a cookie scoop, distribute the batter evenly into the muffin pans on top of the cookie crusts.
  5. 5Bake for 18-20 minutes. Let cool on the pan for 1 hour, then refrigerate for another 2 hours to set (or freeze to speed things up).
  6. 6For the icing, beat the cream cheese and Oreo crumbs together at medium speed for 1-2 minutes. Add the whipped topping and continue mixing until smooth.
  7. 7Pipe the icing onto the tarts and garnish each with a mini Oreo. Store in the refrigerator.

Storage & Reheating

Freezer instructions: store in containers in the freezer for up to 3 months. Thaw as needed.
