Peanut Butter Chocolate Chip Bundt Cake

A few months before quarantine hit, some friends had a cookout and asked me to bring dessert. When I asked what flavor they wanted, the answer was, "Anything with chocolate, peanut butter, or cheesecake." Easy enough — this cake showed up at their door.
While I was deciding how to top it, chocolate ganache kept floating through my head. Then, standing in the checkout line at the grocery store, the Reese's cups practically screamed at me from the candy aisle. They went from the candy display straight into my cart with the rest of the ingredients.
One of the guys at the party asked to cut a slice the second I walked in, and gave me a thumbs up mid-bite with a full mouth. We had to leave early that night, and I still managed to smuggle a slice out for my parents before the whole cake disappeared.
Ingredients
For the Cake
- 1 box Duncan Hines yellow cake mix
- 1 small box instant vanilla pudding mix
- 1 cup peanut butter
- 1/2 cup vegetable oil
- 1 cup water
- 4 eggs
- 1 bag mini semisweet chocolate chips
For the Topping
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
- 4 Reese's peanut butter cups, chopped
Instructions
- 1Preheat the oven to 350°F and grease a bundt pan.
- 2Combine the cake mix, pudding mix, peanut butter, oil, water, and eggs in a mixing bowl or stand mixer, and beat at medium speed for 3-4 minutes.
- 3Stir in the mini chocolate chips, then spoon the batter into the bundt pan.
- 4Bake for 50-60 minutes, or until a toothpick inserted in the middle comes out clean (aside from melted chocolate chips).
- 5Cool in the pan 10-15 minutes, then turn out onto a cooling rack to cool completely before topping.
- 6Heat the heavy cream in the microwave for 60-90 seconds, just until boiling. Pour over the chocolate chips and let sit for a minute, then whisk until smooth.
- 7Spoon the ganache over the cooled cake, then sprinkle with the chopped peanut butter cups.
