Have you ever looked at something on a dessert table and genuinely wondered whether it was an appetizer or a dessert? This is one of those. The confusion clears up fast once you actually start eating it, though.

I'm a huge fan of soft, chewy cookies, which is a big part of why these gingerbread cookies work so well here — they're fantastic dunked straight into the sweet pumpkin dip.

If gingerbread isn't your thing, this dip is just as good with pretzels, Nilla wafers, shortbread cookies, snickerdoodles, or apple slices.

Ingredients

For the Pumpkin Pie Dip

  • 15 oz. can pureed pumpkin
  • 8 oz. cream cheese, softened
  • 2 cups confectioners sugar
  • 1 tsp. ground cinnamon

For the Soft and Chewy Gingerbread Cookies

  • 2 1/4 cups all-purpose flour
  • 2 tsp. ground ginger
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 3/4 cup butter, softened
  • 1 cup light brown sugar
  • 1 egg
  • 1 tbsp. water
  • 1/4 cup molasses

Instructions

  1. 1For the dip: beat the confectioners sugar and cream cheese together at medium speed until smooth. Add the pumpkin and cinnamon and mix until smooth. Refrigerate up to 5 days.
  2. 2Preheat the oven to 350°F.
  3. 3Whisk together the flour, ginger, baking soda, cinnamon, and salt in a bowl and set aside.
  4. 4Beat the butter and brown sugar together at medium speed for 1-2 minutes, until creamy.
  5. 5Add the egg, water, and molasses, and beat about 10 seconds.
  6. 6Add the dry ingredients and beat just until the dough comes together.
  7. 7Scoop the dough onto a silicone-lined cookie sheet and bake 12-14 minutes, until lightly golden.
  8. 8Leave the cookies on the sheet another 10 minutes, then transfer to a cooling rack lined with parchment or paper towels to finish cooling.
  9. 9Serve the cookies alongside the pumpkin dip, along with pretzels or apple slices for dipping, if desired.

Tips

  • Cookie baking time will vary with size — adjust by a minute or two if you go smaller or larger with the scoop.
