Chicken Cordon Bleu Sandwich

Chicken Cordon Bleu is one of my all-time favorite entrees. The only time I don’t get overly excited about this dish is if it’s one of those little “Chicken Twinkies” that you can buy in the freezer section at the grocery store. That’s actually what I had as a kid when I fell in love with it, but I was destroyed after making it from scratch while attending culinary school.

A few nights ago, I was watching the Food Network before bed and started brainstorming recipes. Luckily, my laptop was close by and every time an idea popped in my head, I squealed, grabbed the laptop, and added whatever idea that came up to my recipe to-do list.

Not only am I a big fan of sandwiches, but especially if they’re easy to assemble and delicious. This sandwich fits the bill. They’re perfect for a quick and easy weeknight dinner, or a fun lunch to break the monotony of PBJ. The frozen chicken patties fit inside a hamburger bun perfectly, and all you have to do is add the ham, cheese, and bearnaise sauce. The bearnaise sauce is made from a packet that you can buy in the gravy section of the grocery store, all you need is milk and butter to make it and it’s easy to throw together while your chicken patties are baking in the oven.

Chicken Cordon Bleu Sandwiches

4 frozen chicken patties

8 slices thinly sliced deli ham

4 slices swiss cheese

4 hamburger buns

bearnaise packet (plus 1/4 cup butter and 1 cup milk)

Preheat oven according to package directions for chicken patties. Place patties on a baking sheet and cook until done. While patties are baking, prepare bearnaise sauce in a small sauce pan. When patties are done baking, remove pan from oven, top with 2-3 slices deli ham and 1 slice swiss cheese. Return pan to oven for 1-2 minutes, just until cheese is melted. Spread a small amount of bearnaise sauce on bottom of bun, then place chicken patty, ham, and cheese on top. Spoon some more of the bearnaise sauce on top of the swiss and place top of bun on top of that.
