Well, it’s official; the hot weather is HERE. It’s been so wonderful lately how the temperature has been hanging out in the 80’s on a regular basis with the beautiful sunshine, nice breeze, and then BAM!!! Temperature jumps up to 90-something degrees and it became superhot overnight. I think Mother Nature forgot to take her meds, because she went extreme very quickly.
I’m currently working on my next cookbook, and started concocting freeze pop recipes. Then, I started thinking about putting alcohol in the freeze pop recipes, to make them more adult-friendly. It got a little out of hand quickly, just like Mother Nature throwing this hot weather at us. She’s my inspiration, so maybe I should also come up with a an alcoholic recipe in her honor? She probably needs a good cocktail.
When my 6 year old son saw me making some freeze pops, he got all excited and started asking for one. “Sorry buddy, but you can’t have these freeze pops?” I saw disappointment in his face when he asked why, but his eyes got big and he understood completely when I said, “Because these have alcohol in them, they’re only for adults.” Ohhhhhhhh, okay.
What I LOVE about these is how easy they are to make. The prep time is less than five minutes, and the worst part is actually having to wait for them to freeze in order to enjoy them. The good thing is that with some of these, you could very easily just make this a boozy slushie and enjoy it right after you blend it up. Genius!
Caribbean Freeze Pops
(makes 5-6 pops)
10 oz. frozen pineapple chunks
2 oz. coconut rum
2 oz. light rum
2 oz. blue caracao
4 oz. sweet and sour mix
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Apple Martini Freeze Pops
(makes 5-6 pops)
12 oz. frozen apple juice concentrate
4 oz. sour apple pucker
4 oz. vodka
12 oz. water
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Mai Tai Freeze Pops
(makes 5-6 pops)
10 oz. frozen pineapple chunks
4 oz. coconut rum
2 oz. light rum
2 oz. triple sec
1 ½ teaspoons grenadine syrup
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Margarita Freeze Pops
(makes 5-6 pops)
12 oz. margarita mix
12 oz. water
6 oz. tequila
2 oz. triple sec
Combine all ingredients in a pitcher and stir together. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Pina Colada Freeze Pops
(makes 5-6 pops)
10 oz. frozen pineapple chunks
6 oz. light rum
4 oz. coconut milk
2 tablespoons granulated sugar
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Royal Flush Freeze Pops
(makes 5-6 pops)
4 oz. frozen peaches
4 oz. Crown Royal
2 oz. coconut rum
6 oz. cranberry juice
4 oz. orange juice
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Sangria Freeze Pops
(makes 5-6 pops)
10 oz. frozen tropical fruit
6 oz. dry red wine
2 oz. brandy
4 oz. orange juice
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
Strawberry Daiquiri Freeze Pops
(makes 5-6 pops)
10 oz. frozen strawberries
6 oz. light rum
2 oz. lemon-lime flavored soda
2 tablespoons granulated sugar
Combine all ingredients in a blender and puree until smooth. Using a funnel, pour into plastic freeze pop bags to fill line, squeeze out air and seal tightly. Lay on a flat surface in freezer to freeze completely, minimum of 6 hours or overnight.
