There are several appetizer staples that end up on the menu at my house for every single party, and this is definitely on the list. When I’m trying to simplify the menu for a party and choose three items, it’s at the top. This cheese ball and crackers, veggie tray, chips and dip along with some sort of dessert gives party guests enough to eat without overloading them.
Most occasions, people will take a sample of this if they’ve never had it before, but ALWAYS end up coming back for at least several more servings, fussing at me because they can’t stop eating it.
This recipe is from my first cookbook, Party Time!
Chicken Cheese Ball
5 oz. can chicken, drained
0.4 oz. packet ranch dressing
2 (8 oz.) packages cream cheese, softened
In a medium size mixing bowl, combine all ingredients. Using an electric mixer, beat at medium speed for 1-2 minutes until all ingredients are well-blended. Place a large piece of plastic wrap on counter. Spoon mixture out of bowl and onto plastic wrap. Completely wrap the cheese ball in the plastic wrap, smoothing and shaping as you wrap it up into a ball. Set in refrigerator for at least 2 hours before serving. Remove from fridge about 30 minutes before serving to let cheese ball soften slightly, serve with buttered crackers. Store leftovers in airtight container in refrigerator.
To make this a LOW-CARB/KETO APPETIZER, serve with cucumbers, celery, or some Keto-friendly crackers!
