Chocolate Covered Cheesecake Stuffed Strawberries

Strawberries by themselves are delicious, but what happens when you stuff them with cheesecake filling AND dip them in dark chocolate? BLISS. That’s what happens. I used to serve just the chocolate covered strawberries until I came across this gem. Pretty much anything stuffed with cheesecake sounds fantastic, especially when my belly is involved.

This is one my favorite items to make for a party, especially if it’s a female-based party (baby shower, wedding shower, luncheon, etc.). It’s fantastic to watch someone’s eyes light up when they first see these, then I explain what they are. It’s almost like they just found out there’s a winning lottery ticket for them to grab, and it will fulfill all of their lifelong dreams as soon as they grab one.

Chocolate Covered Cheesecake Stuffed Strawberries

1 lb. fresh strawberries

8 oz. cream cheese, softened

1/3 cup confectioners sugar

1 teaspoon vanilla extract

½ pound dark chocolate (melting wafers or chocolate chips)

Rinse strawberries in cold water, pat dry with paper towels.* Cut off the stem of each strawberry, creating a flat top, set aside. Take a paring knife and hollow out a section for the cheesecake center. In a small mixing bowl, combine cream cheese, powdered sugar and vanilla. Beat with electric mixer at medium speed until mixture is creamy.

Spoon mixture into a pastry bag or Ziploc® freezer bag and cut off the tip. Squeeze mixture into the hollow cavity of each strawberry. Once strawberries are filled with cheesecake mixture, set aside.

Melt chocolate in microwave safe dish in microwave in 15-20 second intervals, stirring in between each interval until melted and smooth.** Pick up each strawberry at the top (where the stuffing is coming out), dip the bottom in melted chocolate, and place on a wax paper-lined cookie sheet. After all strawberries have been dipped, place cookie sheet in refrigerator for at least 10 minutes for chocolate to harden. Remove from cookie sheet and serve immediately, or store in refrigerator until ready to serve.

*Strawberries need to be completely dry before dipping in chocolate!

**Be sure to stir chocolate in between short intervals in microwave to prevent scalding chocolate. Scalded chocolate is yucky, clumpy, and can’t be used!
