Cinco de Mayo is approaching very quickly, and I can’t wait for another excuse (besides Taco Tuesday, or the day ending in a Y) to enjoy Mexican food and margaritas. There’s a local Mexican restaurant that our family goes to on a regular basis, and the type of day I’ve had will determine what size Margarita will be ordered as soon as we sit down. It’s either a small or medium, because I honestly don’t think I’d be able to walk out of there after drinking a large. These things are the size of my head, and I’m not brave enough to order one.

What I LOVE about this recipe is the fact that it has a strawberry twist, and is super cold to help deal with the heat outside. The biggest dilemma I like to deal with while drinking one of these is what kind of Mexican food to eat with it. Let’s face it, the larger the margarita, the less stressed you are about other issues, like feeding your family dinner and more concerned about the location of chips and salsa.

Frozen Strawberry Margarita (makes 8-10 servings)

6 oz. tequila

2 oz. triple sec

6 oz. strawberry daiquiri mix

12 oz. frozen limeade concentrate

4 cups ice

Combine all ingredients in a blender and puree for about 1 minute, or until smooth. Serve immediately in margarita glasses.
