The Ultimate Oreo Cake

A vanilla cake packed with Oreo chunks, layered with chocolate ganache and Oreo cream cheese icing, then piled with even more cookies — the birthday cake I make for myself every year.

Every year for my birthday, someone asks what kind of dessert they should make me, and every year my answer is the same: I want to make it myself. "You can't make your own birthday cake!" people say — but honestly, I'm usually so busy baking for everyone else that a birthday is the perfect excuse to make something just for me, with plenty of people around to help me eat it.

I loved the icing from my Oreo Cheesecake Cookie Tarts so much that I built an entire cake around it. This vanilla cake is packed with Oreo chunks, layered with chocolate ganache and that same Oreo cream cheese icing, and finished with more ganache, more icing, and more Oreos than is probably reasonable.

Ingredients

For the Cake

  • 1 box white cake mix (Duncan Hines)
  • 1 small box instant vanilla pudding mix
  • 3/4 cup vegetable oil
  • 1/2 cup milk
  • 4 eggs
  • 8 oz. sour cream
  • 1 1/2 cups Oreo cookie chunks

For the Oreo Cream Cheese Icing

  • 2 (8 oz.) packages cream cheese, softened
  • 2 cups Oreo cookie crumbs
  • 16 oz. frozen whipped topping, thawed

For the Chocolate Ganache

  • 1 1/2 cups semisweet chocolate chips
  • 3/4 cup heavy cream

Instructions

  1. 1Preheat oven to 350 degrees. In a medium mixing bowl or standing mixer, combine the cake mix, pudding mix, oil, milk, eggs, and sour cream, and beat at medium speed for 1-2 minutes.
  2. 2Stir in the Oreo cookie chunks. Grease and flour three 8-inch round cake pans, and pour the batter evenly into them.
  3. 3Bake for about 28 minutes, until lightly browned on top and a toothpick inserted comes out clean. Let the cakes sit in the pans for 12-15 minutes before turning out onto cooling racks to cool completely.
  4. 4For the icing: combine the cream cheese and cookie crumbs in a mixing bowl or standing mixer, and beat for about 1 minute. Add the whipped topping and continue beating for another minute.
  5. 5For the ganache: heat the heavy cream for 1 1/2 to 2 minutes, until it starts to bubble. Pour over the chocolate chips, let sit for about 1 minute, then whisk vigorously until melted and smooth.
  6. 6Once the cakes have cooled, place one layer on a cake board or cake carrier. Spread about a third of the ganache on top, followed by a layer of Oreo icing. Repeat with the second layer, then top with the third cake layer.
  7. 7Cover the entire cake with the remaining icing. Warm the remaining ganache slightly so it pours easily, and drizzle it down the sides of the cake.
  8. 8Finish decorating with any remaining icing and plenty of extra Oreo cookies.
