Philly Cheesesteak Wrap

The first time I had a homemade Philly cheesesteak was at my brother's house, when his wife made them for us. I've always loved the classic combination of roast beef, provolone, sauteed onions and peppers — but hers had one big difference: a provolone cheese sauce on the side.

When I went to assemble my sandwich and asked where the cheese was, she pointed to a little pot of white sauce. My eyes lit up, and I poured what felt like three cups of it all over my plate.

When I was looking for something a little different for lunches, that memory came right back to me — so I turned it into a wrap. With a wrap, you can focus more on the fillings and actually dip them into the sauce instead of just topping a sandwich with it.

Ingredients

For the Wraps

  • 1/2 lb. thinly sliced deli roast beef (such as Boar's Head London Broil)
  • 1 whole onion, sliced
  • 2 green bell peppers, sliced
  • 2 tbsp. olive oil
  • 4 flour tortilla wraps (burrito size)

For the Provolone Sauce

  • 1 tbsp. unsalted butter
  • 1 tbsp. all-purpose flour
  • 2 cups whole milk
  • 8 oz. provolone cheese, cut into small chunks
  • 1/4 cup grated parmesan
  • 1 tsp. salt

Instructions

  1. 1Saute the beef in the olive oil in a skillet over medium heat until browned and hot. Remove and set aside.
  2. 2Add the onion and bell peppers to the pan and cook until tender.
  3. 3While the beef and vegetables cook, make the provolone sauce: melt the butter over medium heat, whisk in the flour, and cook 1 minute.
  4. 4Slowly whisk in the milk and cook about 10 minutes to thicken.
  5. 5Add the provolone and parmesan and stir continuously until melted and smooth. Spoon into small dishes for dipping.
  6. 6Heat the tortillas in the microwave for 20-30 seconds, until warm and flexible.
  7. 7Distribute the meat between the tortillas, top with the vegetables, and wrap tightly. Serve with the provolone sauce for dipping.
