Chicken Cordon Bleu Sandwich

Chicken Cordon Bleu is one of my all-time favorite entrees, as long as it's not one of those frozen "chicken twinkies" — although, honestly, that's exactly what I grew up loving before culinary school ruined me for the shortcut version forever.
I dreamed this sandwich up one night while watching the Food Network before bed, squealing and grabbing my laptop every time an idea hit so I wouldn't forget it by morning. I'm a big fan of sandwiches in general, especially the kind that come together fast without sacrificing flavor.
Frozen chicken patties fit a hamburger bun perfectly, and between the ham, swiss, and a quick bearnaise made from a packet, this turns into a genuinely great weeknight dinner or a fun way to break up the usual lunchtime rotation.
Ingredients
- 4 frozen chicken patties
- 8 slices thinly sliced deli ham
- 4 slices swiss cheese
- 4 hamburger buns
- 1 packet bearnaise sauce mix (plus 1/4 cup butter and 1 cup milk)
Instructions
- 1Bake the chicken patties according to package directions on a baking sheet.
- 2While the patties bake, prepare the bearnaise sauce in a small saucepan according to the packet directions.
- 3When the patties are done, top each with 2-3 slices of ham and a slice of swiss cheese. Return to the oven for 1-2 minutes, just until the cheese melts.
- 4Spread a little bearnaise sauce on the bottom bun, then stack the chicken patty, ham, and cheese on top. Spoon more bearnaise over the cheese and finish with the top bun.
