Best Pumpkin Spice Muffins

Pumpkin Spice season gets all the hype in the fall, but truthfully, I eat these muffins year-round because they're my absolute favorite. My freezer usually has a stash of jumbo muffins in rotation, which makes weekend mornings almost too easy.

The routine is simple: pull out whatever flavors everyone wants the night before, set them on the counter, and breakfast is basically ready when everyone wakes up. Turn on the coffee, pop a muffin in the microwave for 20-30 seconds, and my belly is happy.

Ingredients

For the Muffins

  • 1 box Duncan Hines yellow cake mix
  • 15 oz. can pumpkin
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon cinnamon
  • 2 cups cinnamon chips and/or chopped pecans (optional)

For the Streusel Topping

  • 1/2 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 5 tablespoons unsalted butter, melted

Instructions

  1. 1Preheat oven to 450 degrees.
  2. 2In a standing mixer or mixing bowl, combine the cake mix, pumpkin, oil, eggs, and cinnamon. Beat at medium speed for 1-2 minutes, until well combined.
  3. 3Stir in the cinnamon chips and/or pecans, if using.
  4. 4Line 2 jumbo muffin pans with liners and distribute the batter evenly.
  5. 5Combine the streusel ingredients in a small bowl and toss together, then sprinkle evenly over each muffin.
  6. 6Bake for 12 minutes, then reduce the oven temperature to 350 degrees and continue baking for another 20 minutes, or until a toothpick inserted comes out clean.
  7. 7Let cool for about 5 minutes before removing muffins from the pans and cooling completely on racks.

Storage & Reheating

Freezer instructions: wrap cooled muffins individually in plastic wrap and freeze. Thaw at room temperature overnight or defrost in the microwave (remove the plastic wrap first). Cinnamon chips can be hard to find in stores some seasons — I've had to order mine online, but they're worth tracking down.
