Lemon Blueberry Scones

Gluten-free, dairy-free drop scones packed with wild blueberries and bright lemon, finished with a simple glaze — no rolling or cutting required.

I didn't realize how much I loved scones until I actually started making them myself. My first attempts were the traditional, gluten-and-dairy kind, and while they were fabulous, they took a lot more effort than these — which you just scoop and drop on the pan like biscuits.

Since it's rare for me to eat a traditional pastry these days, I've made it a mission to build gluten-free, dairy-free versions worth making at home. These have become one of my favorite weekend indulgences with a cup of coffee — all the flavor, none of the aftermath.

Ingredients

  • 1 cup brown rice flour
  • 2 cups oat flour
  • 1 cup almond flour
  • 1 tsp. xanthan gum
  • 2 tbsp. baking powder
  • 1 tsp. salt
  • 1/4 cup granulated sugar (optional)
  • 1 1/2 cups non-dairy milk (almond or oat)
  • 1/2 cup maple syrup
  • Juice and zest from 1 lemon
  • 10 tbsp. plant butter or coconut oil, melted
  • 2 cups frozen wild blueberries, thawed and drained
  • 1/3 cup confectioners sugar
  • 1-3 tbsp. water

Instructions

  1. 1Preheat the oven to 350 degrees. In a mixing bowl or standing mixer, combine the flours, baking powder, xanthan gum, salt, and sugar.
  2. 2Stir slowly to blend, then add the non-dairy milk, maple syrup, lemon juice and zest, and melted butter. Beat at medium speed just until well combined, then stir in the blueberries.
  3. 3Using a cookie scoop, scoop the batter onto silicone-lined baking sheets and lightly press each mound flat with the palm of your hand.
  4. 4Bake for 14-16 minutes, or until lightly browned. Cool completely on the pans.
  5. 5Combine the confectioners sugar and water in a small dish and mix well, then drizzle over the cooled scones.

Storage & Reheating

Freezer instructions: once the scones have cooled and the icing has dried, wrap each one individually and freeze for up to 6 months. Thaw at room temperature when ready to enjoy.
