Chicken Parmesan Casserole

All the flavor of chicken parmesan layered into an easy casserole — pasta, shredded chicken, marinara, and plenty of melted cheese under a buttery breadcrumb topping.

Throwing together a quick, satisfying weeknight dinner doesn't get much easier than this one. I love that you can double it for a bigger crowd, assemble it a day or two ahead and keep it in the fridge, or tuck it straight into the freezer for a rainy day.

Grab a loaf of garlic bread and a bag of Caesar salad kit, and you've basically got yourself a full Italian feast with almost no effort.

This is one of those recipes I keep coming back to whenever the week gets away from me and dinner still needs to happen.

Ingredients

  • 8 oz. pasta, cooked and drained
  • 2 cups cooked chicken (shredded or cubed), tossed with 1 teaspoon Italian seasoning
  • 1 (24 oz.) jar spaghetti sauce (your favorite kind)
  • 1/2 cup grated parmesan cheese
  • 2 cups grated mozzarella cheese
  • 1/2 cup breadcrumbs
  • 4 tablespoons butter, melted

Instructions

  1. 1Preheat the oven to 375 degrees. Spread the cooked pasta into the bottom of a greased 8x8 inch baking dish, then layer the chicken on top.
  2. 2Pour the spaghetti sauce evenly over the chicken, making sure it's fully covered. Sprinkle with parmesan, then mozzarella.
  3. 3Sprinkle the breadcrumbs over the mozzarella and drizzle with the melted butter.
  4. 4Bake for 30 minutes and serve hot.

Storage & Reheating

Double the recipe and split it between two freezer-safe containers to store in the freezer for up to 3 months.
