Dark Chocolate Fudge Brownies

Gluten-free, dairy-free brownies loaded with chocolate chunks and a hit of coffee to deepen the chocolate flavor — rich, chewy, and worth the four rounds of testing.

Every so often I get a real hankering for chocolate, and standing in front of the pantry cursing myself for not having anything good to eat isn't a great look. Since gluten and I don't get along, finding something store-bought that actually satisfies has always been a challenge — so here's my compromise: gluten-free, dairy-free, and every bit as rich and chewy as the real thing.

I went through four rounds of recipe testing before landing on the fudgiest version, and my kids taste-tested every single batch. This one won by unanimous vote, and it's already been requested for school lunchboxes.

Ingredients

  • 6 large eggs
  • 2 cups coconut sugar
  • 1 cup Paleo flour blend
  • 1/4 cup unsweetened dark cocoa powder
  • 1/4 cup coffee, cooled
  • 2 teaspoons vanilla extract
  • 2 cups dairy-free dark chocolate chips (my favorite brand is Enjoy Life)
  • 1 1/4 cups refined coconut oil
  • 1 cup dairy-free chocolate chunks (my favorite brand is Enjoy Life)
  • 1/2 teaspoon sea salt

Instructions

  1. 1Preheat oven to 325 degrees F. Combine the flour and cocoa in a small bowl and set aside.
  2. 2Melt the 2 cups of chocolate chips and coconut oil in a microwave-safe dish in 30 second intervals, stirring between each, until smooth.
  3. 3Combine the coconut sugar and eggs in a mixing bowl or standing mixer and beat at medium speed for 2-3 minutes.
  4. 4Add the melted chocolate, coffee, and vanilla, and beat just until combined. Add the dry ingredients and beat again just until combined.
  5. 5Line a 9x13 inch pan with parchment paper (overhanging the edges) and coat with cooking spray.
  6. 6Stir the chocolate chunks into the batter, then spread evenly into the pan and sprinkle with the sea salt.
  7. 7Bake for 40-45 minutes, until a toothpick inserted in the center comes out with just a few crumbs (unless you hit a chocolate chunk).
  8. 8Cool on a rack. Once cooled, lift out using the parchment overhang, transfer to a cutting board, and cut into squares with a sharp knife.

Storage & Reheating

Store in an airtight container for up to 3 days. Freezer instructions: wrap individual brownies in plastic wrap and store in a ziplock bag or airtight container in the freezer for up to 3 months.
