My husband isn't much of a foodie, but the mention of peach cobbler is one of the rare times I see his eyes actually light up. Summer means peaches are everywhere, and I swear I can't drive past a peach stand without singing that "Peaches" song from the nineties in my head.
When I mentioned it was peach season, he got excited for cobbler — he just didn't need to know I was quietly making a gluten-free, dairy-free (and yes, technically vegan) version for myself, too.
He found out anyway, of course, the moment he saw me eating some right alongside him. I made sure to grab some dairy-free vanilla ice cream to go with it, and mission was fully accomplished.
Ingredients
For the Filling
- 8 ripe peaches, peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1/4 tsp. salt
For the Batter
- 8 tbsp. plant butter, melted
- 1 1/4 cups gluten-free all-purpose flour
- 1 cup granulated sugar
- 1 tbsp. baking powder
- 1/4 tsp. salt
- 3/4 cup non-dairy milk (oat or almond work well)
Instructions
- 1Preheat the oven to 350°F.
- 2Combine the peaches, sugar, and salt in a saucepan and cook over medium heat until the sugar dissolves. Set aside.
- 3Pour the melted butter into a 9x13 inch baking dish.
- 4Whisk together the flour, sugar, baking powder, and salt in a bowl. Add the non-dairy milk and stir just until combined.
- 5Pour the batter into the baking dish and gently stir it into the butter.
- 6Spoon the peaches and their juice evenly over the batter.
- 7Bake for 35-40 minutes. Serve warm with ice cream and a smile.
