Dark Chocolate Mocha Truffles

A silky dark chocolate ganache spiked with coffee liqueur, dipped twice, and drizzled with a lighter chocolate for contrast — the perfect pairing with a glass of red wine.

I hosted a wine tasting a while back — six wines, a cheese tray, and this box of truffles I brought along almost as an afterthought. The question I got all night, usually somewhere between a sip of Cabernet and a bite of truffle, was some version of: "Wait, YOU made these?"

I made close to fifty of them for a party of fourteen and still had to sneak out with a handful set aside for the staff at Krafty Draft, since I'd promised to drop some off on my way home. These have become a permanent fixture at every wine night since.

Ingredients

  • 12 oz. bag dark chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 2 tablespoons coffee liqueur
  • 10 oz. dark chocolate melting wafers
  • 1/2 cup white chocolate melting wafers

Instructions

  1. 1Pour the chocolate chips into a medium mixing bowl.
  2. 2Heat the cream and butter in a microwave-safe dish for 1 to 1 1/2 minutes, until the cream just starts to boil and the butter is melted. Stir together, then pour over the chocolate chips.
  3. 3Whisk until the chocolate melts and the mixture is smooth, then stir in the coffee liqueur.
  4. 4Refrigerate for at least 1 hour to harden, or let sit at room temperature for about 2 hours for an easier-scooping consistency.
  5. 5Using a mini ice cream scoop, portion out about 1 tablespoon at a time onto a wax-paper-lined sheet pan. Refrigerate for at least 30 minutes.
  6. 6Melt the dark chocolate wafers in a microwave-safe dish in 30 second intervals, stirring between each, until smooth.
  7. 7Remove the truffles from the fridge and roll between your hands for a smooth surface. Insert a toothpick, dip in the melted dark chocolate, and tap gently to remove excess. Use a second toothpick to push the truffle off onto wax paper. Repeat with all truffles.
  8. 8Melt the white chocolate wafers with the remaining dark chocolate in the microwave, stirring between intervals, then spoon into a squeeze bottle and drizzle over the dipped truffles.
  9. 9Store in the refrigerator until ready to serve.

Storage & Reheating

Let truffles sit at room temperature for at least 30 minutes before serving for the best texture. They're fine out of the fridge for up to 5 hours.
