No-Churn Pumpkin Spice Ice Cream

Here in South Carolina, fall shows up on the calendar but the weather never quite got the memo — it still feels like summer well into pumpkin season. So this is my answer: a cold treat that still tastes unmistakably like fall, thanks to a full can of pumpkin puree, warm spice, and brown sugar.
My mother-in-law walked in right after I'd photographed this and her eyes went wide — next thing I knew she was at the table with a spoon, doing her best professional taste-tester impression. She approved, pecans and all.
Ingredients
For the Ice Cream
- 14 oz. can sweetened condensed milk
- 1 cup pumpkin puree
- 1/2 cup light brown sugar
- 1 tsp. pumpkin spice
- 1 tbsp. vanilla extract
- 2 cups heavy cream
- 1 cup chopped pecans (optional)
For the Maple Whipped Cream
- 1 cup heavy cream
- 1 tbsp. granulated sugar
- 1/2 tsp. pure maple extract
Instructions
- 1In a large mixing bowl, whisk together the sweetened condensed milk, brown sugar, pumpkin puree, vanilla, and pumpkin spice.
- 2In a standing mixer or mixing bowl, beat the 2 cups heavy cream at high speed until stiff peaks form.
- 3Fold half of the whipped cream into the pumpkin mixture until combined, then fold in the remaining whipped cream. Stir in the pecans, if using.
- 4Pour into an ice cream container, cover, and freeze for a minimum of 4 hours to set.
- 5For the maple whipped cream, beat the heavy cream, sugar, and maple extract together until soft peaks form.
- 6Serve the ice cream with maple whipped cream, extra pecans, and a drizzle of caramel sauce.
Tips
- Single-serve tip: distribute into 4 oz. containers for the kids and 8 oz. containers for the adults — fewer dishes, and it keeps you from eating a whole pint in one sitting.
Storage & Reheating
Freezer instructions: store for up to 6 months, and pull out to enjoy as desired.
