If there's one recipe my kids request on repeat, it's these. I can't make a batch without someone sneaking a few before they even make it into the container. They've become a lunchbox and after-school staple around here, and they're just as good grabbed on the way out the door for a chaotic-morning breakfast.

They're made from simple pantry staples, so I feel good handing them out — and my kids treat them like dessert, which works out for everyone. I've even been known to grab one before a run.

Ingredients

  • 2 cups gluten-free oats
  • 1 cup nut butter (peanut, almond, or sunflower seed)
  • 1 cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1/3 cup mini chocolate chips

Instructions

  1. 1In a mixing bowl or standing mixer, combine the oats, nut butter, honey, and protein powder, and beat at medium speed for about 1 minute, until well combined.
  2. 2Add the chocolate chips and mix again, just until incorporated.
  3. 3Using a mini cookie scoop, portion the mixture onto a parchment-lined baking sheet.
  4. 4Roll each portion into a smooth ball with your hands, then refrigerate for at least 30 minutes to set.

Tips

  • Endlessly customizable — try coconut, chia seeds, or a different nut butter depending on what you have on hand.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 1 week, if they last that long.
