Roasted Mixed Nuts

Cashews, almonds, and pecans roasted in avocado oil and a little salt — the healthy snack that actually holds you over.

I am a huge fan of mixed nuts — they're on the table at every family gathering, and for years I stuck with the traditional store-bought kind until I started roasting my own. Now there's no going back.

I make a batch of these almost every week to keep on hand for a healthy snack, and most days they're part of my breakfast lineup alongside scrambled eggs. Walnuts and almonds are considered superfoods, so I make sure they're always in the mix.

Honestly, this has become my go-to when a craving for something unhealthy hits — a small bowl of these usually does the trick.

Ingredients

  • 7 oz. package raw organic cashews
  • 6 oz. package raw organic almonds
  • 8 oz. package raw organic pecans
  • 1/4 cup avocado oil
  • 1/2-1 tsp. pink Himalayan salt (to taste)

Instructions

  1. 1Preheat oven to 350°F.
  2. 2In a medium mixing bowl, combine all the nuts and the oil, and toss until the nuts are evenly coated.
  3. 3Spread into a lightly greased 9x13-inch baking dish and bake for about 20 minutes, until the nuts are lightly roasted and fragrant.
  4. 4Remove from the oven, sprinkle with salt, and stir with a spatula until evenly coated.
  5. 5Line a mixing bowl with paper towels, dump in the nuts, and let cool completely for at least 2 hours.
  6. 6When cooled, store in an airtight container at room temperature.

Tips

  • Avocado oil has a much higher smoke point than olive oil and a neutral flavor, which is why I prefer it for roasting.
