Fruity Mini Pancake Skewers

I'm a big fan of opening my eating window with something worth opening it for, and these little skewers definitely qualify — especially with a hot cup of coffee. Pancakes are fantastic by themselves, but layering in fresh fruit and a maple syrup drizzle takes them up a notch.

Ingredients
- 1 cup baking mix (like Bisquick)
- 1/2 cup milk
- 1 egg, beaten
- 1 pint fresh strawberries, sliced
- 2-3 bananas, sliced
- 1 pint fresh blueberries
- Confectioners' sugar, for dusting
- Maple syrup, for drizzling
Instructions
- 1In a medium mixing bowl, whisk together the baking mix, milk, and egg.
- 2Heat an electric skillet or non-stick pan over medium heat. Spoon the batter into a squeeze bottle and squeeze quarter-size rounds onto the pan.
- 3Cook until bubbles rise and the bottom is golden, then flip to cook the other side. Repeat with remaining batter.
- 4Assemble the skewers: start with a pancake, add a strawberry slice, a banana slice, another pancake, and repeat once more.
- 5Top with a fresh blueberry and push a skewer through the middle.
- 6Dust lightly with confectioners' sugar and drizzle with maple syrup.
