Grampy's Hillbilly Chili

A three-ingredient sausage, salsa, and baked bean concoction that's just as good spooned over a hot dog as it is served as a dip or side.

My parents rented a cabin on the lake last weekend for a family get-together, and as usual there was enough food to feed a small army. My mom always tries to send leftovers home with everyone at the end of the trip, and she still somehow ends up with way too much. Sound familiar?

This was the second time my dad made this concoction of his, and we've all fallen hard for it. It's stupidly easy and endlessly versatile — dip, side, main dish, whatever you need it to be. My favorite way is spooned right over a hot dog, though the second time around I just grabbed a spoon and ate it like chili.

Ingredients

  • 1 lb. ground sausage
  • 16 oz. jar restaurant-style salsa (Pace's is my dad's pick — the thicker consistency makes a real difference here)
  • 24 oz. baked beans (any kind)

Instructions

  1. 1Cook the sausage in a pot until browned, then drain.
  2. 2Combine the sausage with the salsa and baked beans in a pot or crock pot.
  3. 3Cook until hot and serve.

Tips

  • My favorite way to eat this is spooned right over a hot dog, though it holds its own as a dip, side dish, or main.
