This dessert lives permanently on my short list of go-to sweets for a social gathering — easy, simple, and good enough that even the non-dessert people in my life go back for seconds. One friend of mine, who genuinely doesn't care much for sweets, took a small piece at dinner one night and ended up finishing it, then going back for more.
"I never go back for seconds, so I hope you realize how good this is," she told me. When I insisted it was too easy to be that impressive, my husband laughed and said, "No, tell her you spent hours on it!" I didn't. I wanted her to be able to make it too — and we didn't bring a single bite home.
Ingredients
- 1 box dark chocolate fudge brownie mix
- 1 egg
- 1/3 cup vegetable oil
- 1/3 cup water
- 1 small box instant chocolate pudding mix
- 2 cups milk
- 1 package Oreo cookies
- 8 oz. frozen whipped topping, thawed
Instructions
- 1Preheat the oven to 350 degrees. Dump the brownie mix into a medium mixing bowl.
- 2Whisk together the oil, water, and egg in a measuring cup, then pour over the brownie mix. Gently stir with a spatula until just combined.
- 3Spread into a greased 9x13 inch baking dish and bake for 20-22 minutes, until a toothpick inserted in the center comes out clean. Cool completely on a rack.
- 4Whisk together the instant chocolate pudding mix and milk, then refrigerate for five minutes to set.
- 5Spread the pudding over the cooled brownie in an even layer.
- 6Set one Oreo aside for garnish. Break the remaining cookies into chunks and sprinkle evenly over the pudding layer.
- 7Spread the whipped topping on top to cover completely. Crumble the reserved cookie over the top for garnish.
