If you're craving thick, fudgy, dangerously addictive gluten-free M&M brownies, buckle up — this one is about to become a regular in your rotation. We're taking a basic gluten-free brownie mix and upgrading it with melty chocolate chips and way too many M&Ms, because moderation has never been my strong suit.

The best part is that no one will guess these are gluten-free, and honestly, you don't have to tell them. Easy, rich, and endlessly customizable — swirl in some peanut butter or caramel if you're feeling ambitious.

Ingredients

  • 2 boxes gluten-free brownie mix
  • Eggs, oil, and water (as directed on the box)
  • 1 cup chocolate chips
  • 10 oz. bag mini M&Ms

Instructions

  1. 1Preheat the oven to 350 degrees. Line a 9x13 inch baking pan with parchment paper hanging over the sides, and coat with cooking spray.
  2. 2Dump both bags of brownie mix into a large mixing bowl. Whisk together the oil, eggs, and water in a separate measuring cup.
  3. 3Pour the liquid mixture into the brownie mix and gently stir with a spatula until well combined, then gently stir in the chocolate chips.
  4. 4Spread the batter into the pan in an even layer, then sprinkle the M&Ms on top.
  5. 5Bake for about 48-50 minutes, until a toothpick inserted in the center comes out with just a tiny bit of fudge on it.
  6. 6Cool completely on a cooling rack, then lift out using the parchment overhang and transfer to a cutting board to slice.

Storage & Reheating

Freezer instructions: once cooled and cut, wrap the brownies individually and store in a ziplock bag or airtight container in the freezer for up to 6 months.
