One of my favorite things is roasting marshmallows over a fire pit for a proper s'more, but that doesn't happen nearly often enough. This is my stand-in — I can make a batch of these anytime, and they come together fast.

They also don't last long when I bring them up to Krafty Draft. One bite of that dark chocolate shell giving way to marshmallow creme and graham cracker, and they're gone.

Ingredients

  • 10 oz. bag dark chocolate wafers (like Ghirardelli)
  • 1 package graham crackers
  • 7 oz. marshmallow creme

Instructions

  1. 1Melt the chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring each time, until smooth.
  2. 2Spoon a small amount of chocolate into each cavity of a candy bar mold, then use a small brush to paint it along the bottom and up the sides. Freeze for 1-2 minutes, until hardened.
  3. 3Spoon the marshmallow creme into a pastry bag, snip the tip, and pipe into each chocolate-lined cavity.
  4. 4Cut the graham crackers to fit each cavity and press down into the marshmallow creme.
  5. 5Spoon a little more melted chocolate on top of the graham cracker and use the brush to cover completely.
  6. 6Freeze for about 5 minutes to set, then pop the candy bars out of the mold.
