Smothered Cheese Fries

When I look at a restaurant menu, the appetizer section always grabs me first, and cheese fries are near the top of my list — but not just any cheese fries. I want the kind smothered in cheese, topped with bacon, and served with a gallon of ranch on the side.

In college, my friends knew better than to step away from the table for more than a few seconds or their half would be gone. These days my metabolism has slowed down some, but my standards for cheese fries have not.

Ingredients

  • 1 (20 oz.) bag crinkle-cut frozen French fries
  • 1 (10 3/4 oz.) can cheddar cheese soup
  • 1/2 cup milk
  • 3 cups grated sharp cheddar cheese
  • 1/4 cup real bacon bits

Instructions

  1. 1Cook the fries according to the package directions (baking or frying).
  2. 2While the fries cook, stir together the cheddar cheese soup and milk in a medium saucepan over medium heat until hot. Add the cheese and whisk as it melts.
  3. 3When the fries are done, transfer to a 9x13-inch baking dish or serving platter.
  4. 4Pour the cheese sauce over the fries and top with the bacon bits. Serve warm.

Tips

  • Freshly grated cheese melts smoother and creamier than bagged shredded cheese — add extra for a thicker sauce.
