Carolina Reuben Pinwheels

A southern spin on the classic Reuben — turkey, coleslaw, and swiss rolled into tortillas with a Thousand Island cream cheese spread, sliced into easy party bites.

Years ago I fell hard for a Carolina Reuben at a little downtown shop in Columbia, and I've been finding ways to work it into other things ever since. If you haven't had one, it's a southern take on the classic — turkey and coleslaw with swiss and Thousand Island instead of corned beef and sauerkraut.

This is my go-to way to share that flavor at a party without making thirty-five full-size sandwiches. Nobody has time for that when they're trying to actually enjoy the party. Plus, it's a lot easier to justify eating eight of these in one sitting when they're bite-sized.

They slice up neatly after a couple hours in the fridge, so they're an easy make-ahead for any gathering.

Ingredients

  • 3 extra large tortillas (burrito size)
  • 4 oz. cream cheese, softened
  • 1/3 cup Thousand Island dressing
  • 18 slices deli turkey
  • 12 slices swiss cheese
  • 1 1/2 cups coleslaw (prepared or homemade)

For the Slaw

  • 1 bag angel hair coleslaw
  • 2/3 cup mayonnaise
  • 1/2 teaspoon black pepper

Instructions

  1. 1If making the slaw, stir together the coleslaw mix, mayonnaise, and pepper in a bowl until well combined. Set aside or refrigerate until ready to use.
  2. 2Beat the cream cheese and Thousand Island dressing together for about 2 minutes, until well blended (a few small lumps are fine).
  3. 3Microwave the tortillas for 15-20 seconds to soften them, then slice about an inch off two opposite sides of each one.
  4. 4Spread a third of the dressing mixture over each tortilla. Layer with 6 turkey slices, 4 slices of swiss, and 1/2 cup coleslaw, spreading the slaw into a thin layer.
  5. 5Starting at one rounded end, roll each tortilla up as tightly as you can. Place seam-side down on a wax paper-lined baking sheet and refrigerate at least 2 hours, or overnight.
  6. 6Slice into 1 inch pieces, discarding the uneven ends. Arrange on a platter and chill until ready to serve.
