Creamy Corn Dip

The first time I had a corn dip like this was at a baby shower about ten years ago, and I hovered over the dish like a bodyguard, growling at anyone who got too close. After eyeing the original recipe's twelve ingredients and thirty minutes of prep, I decided there had to be an easier way — and there was.

I've served this at more vendor events than I can count, and it's the one item people specifically come looking for if it's not out yet. Friends have accused me of sneaking something into it because of how addictive it is. I'll never confirm or deny.

Ingredients

  • 24 oz. frozen corn
  • 1 cup mayonnaise
  • 8 oz. cream cheese, softened
  • 1 cup grated sharp cheddar cheese, plus extra for topping
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, melted

Instructions

  1. 1Preheat oven to 350 degrees.
  2. 2In a medium mixing bowl, combine the mayonnaise, cream cheese, cheddar, and seasonings. Beat with an electric mixer at medium speed until well combined, then mix in the melted butter.
  3. 3Gently stir in the frozen corn and spoon into an 8x8 inch baking dish. Sprinkle extra cheese on top.
  4. 4Bake for 35-45 minutes, until hot and golden brown on top. Serve with tortilla chips.

Tips

  • Slow cooker option: mix everything together, spoon into a 2-quart slow cooker, and cook on low for 2-3 hours, stirring occasionally, until hot. Switch to warm for serving.
  • Taco Tuesday version: stir in 2 teaspoons Mexican seasoning and swap in pepper jack cheese.

Storage & Reheating

Freezer instructions: double the recipe and portion into freezer-safe containers you can pop straight in the oven. Cover and store for up to 3 months, thawing overnight in the fridge before baking.
