Instant Pot Collard Greens

Instant Pot collard greens with bacon, ham, and a touch of maple syrup — a Southern side made quick without losing that slow-cooked flavor.

I have a confession: although I've lived my entire life in the Southeast, I did not grow up eating collard greens. When my mother-in-law invited us over for New Year's Day lunch, my husband volunteered us to bring the Collard Greens — a dish I'd never even made, let alone tasted.

I found an Instant Pot method, made a few tweaks to the vinegar and seasoning, and it's become a staple on our family menu ever since.

Ingredients

  • 1 tbsp. avocado oil
  • 2 slices thick-cut bacon, chopped
  • 4 oz. diced ham
  • 1 small sweet onion, diced
  • 1 cup chicken bone broth
  • 2 tbsp. apple cider vinegar
  • 3 tbsp. maple syrup
  • 1/2 tsp. crushed red pepper flakes
  • 1 lb. collard greens, roughly chopped

Instructions

  1. 1Thoroughly rinse the greens in a colander and set aside to drain.
  2. 2Turn the Instant Pot to sauté and add the avocado oil and bacon. Cook until the bacon is slightly crispy, then add the ham and onion. Cook until the onion is tender, scraping up any browned bits.
  3. 3Add the bone broth, scraping up more browned bits, then stir in the apple cider vinegar, maple syrup, and red pepper flakes. Turn off the Instant Pot.
  4. 4Add the greens to the pot, pressing down until the pot is about two-thirds full. Cover, set to manual, and pressure cook for 5 minutes.
  5. 5When the timer beeps, release the steam over about 20 minutes. Remove the lid, stir well, and serve warm.
