Sneaky Mashed Potatoes (with Hidden Cauliflower)

Do you have trouble getting your family to eat their vegetables? The trick is simple: don't tell them. My brother is my favorite target for this — he and his son rarely eat anything outside their comfort zone, so sneaking cauliflower into mashed potatoes has become one of my favorite tricks.

The first time I served these, I said nothing about how they were made. My husband took a bite and said, "Oh wow, these are really creamy." I just smiled and said, "It's the secret ingredient." My brother, after being warned not to throw away his leftovers, later texted to say they were the best mashed potatoes he'd ever had — until I told him what was in them. Worth it, every time.

Ingredients

  • 3 russet potatoes, peeled and cubed
  • 2 (10 oz.) bags steam-in-bag cauliflower (or 1 head cauliflower)
  • 4 oz. dairy-free cream cheese
  • 6 tbsp. dairy-free plant-based butter
  • 1-2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 3/4 cup reserved hot potato water

Instructions

  1. 1Boil the potato chunks in a pot of salted water over medium-high heat until soft enough to mash, about 20-22 minutes.
  2. 2Meanwhile, cook the cauliflower according to the package directions, then puree in a blender with the cream cheese, butter, and hot potato water until smooth.
  3. 3Drain the potatoes, reserving 3/4 cup of the cooking water for the puree, and mash thoroughly in a large mixing bowl.
  4. 4Pour the cauliflower puree into the bowl with the potatoes. Add the salt and pepper.
  5. 5Beat with an electric mixer until smooth and creamy.

Tips

  • If using a head of cauliflower instead of steam-in-bag, chop off the large stems and boil in water until tender, about 10 minutes.

Storage & Reheating

Freezer instructions: portion into freezer-safe containers, cool, cover, and freeze for up to 3 months. Thaw and reheat as needed.
