Oven Roasted Red Potatoes

These potatoes are one of my favorite healthy comfort foods, and I'm a huge fan of potatoes in pretty much any form — baked, fried, roasted, mashed, even raw as a kid sneaking cubes while my mom cut them up for dinner.

I always try to balance our dinner plates with protein, carbs, and veggies, and these show up on ours at least once a week because they're simple, healthy, and the whole family loves them.

They also happen to be gluten-free, dairy-free, vegan, and Whole30 compliant, which makes them an easy one to keep in the regular rotation no matter who's eating.

Ingredients

  • 24 oz. package red potatoes, cut into 1/2 inch chunks
  • 1/4 cup olive oil
  • 1/2 tsp. sea salt, more or less to taste

Instructions

  1. 1Preheat the oven to 400°F.
  2. 2Toss the potatoes with the olive oil in a bowl, then spread evenly into a greased 9x13 inch baking dish.
  3. 3Bake for 1 hour, or until golden brown and crispy.

Tips

  • My kids love these with just salt, dipped in ketchup like french fries — feel free to add other seasonings if you want something different.
