Fudgy Black Bean Brownies

If you're looking for a sneaky way to get more fiber into your family's diet, I've got you covered. I'd always cringed a little at the idea of brownies made with black beans, sure they couldn't possibly taste like the real thing. I was wrong.

I doubled the original recipe I'd seen so the brownies would come out thicker and fluffier, and made them in my blender for the smoothest texture. When I brought a batch to my brother and let him eat one before telling him the secret ingredient, he just stared at me. "How??" Magic, big bro. Magic.

Ingredients

  • 2 (15 oz.) cans black beans, drained and rinsed
  • 1/4 cup organic cacao (or unsweetened dark cocoa)
  • 3/4 cup oat flour
  • 1/4 cup vegan protein powder (vanilla or chocolate)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup maple syrup
  • 1/2 cup coconut or avocado oil
  • 2 tablespoons vanilla extract
  • 1 cup dairy-free chocolate chips (my favorite brand is Enjoy Life)
  • 1 cup chopped nuts (optional)

Instructions

  1. 1Preheat oven to 350 degrees.
  2. 2In a blender, combine all ingredients except the chocolate chips and nuts, and puree until smooth.
  3. 3Pour into a greased and lined 8-inch square pan.
  4. 4Stir in the chocolate chips and nuts, and spread into an even layer.
  5. 5Bake for 30-35 minutes, until a toothpick inserted in the center comes out with just a little fudgy residue.
  6. 6Cool for about 30 minutes before cutting into squares.

Tips

  • Double the recipe to bake in a 9x13 inch pan.

Storage & Reheating

Store in an airtight container for up to 5 days, or wrap individually and freeze for up to 6 months.
