Cauliflower Sausage Gravy with Almond Flour Biscuits

This is the first in a whole line of recipes I plan on sharing that sneak pureed cauliflower into everyday dishes. While working at Carolina Keto Cakes, Nicole Yates showed me an incredible keto sausage gravy made with heavy cream and almond milk, and I saw the perfect opportunity to swap in cauliflower for some extra veggies without anyone noticing.
The biscuits come from a recipe I found through Wholesome Yum, and they've become a permanent fixture in my freezer. Most mornings I pull one out to thaw, slather it in butter, and pair it with scrambled eggs — they're just as good split for a breakfast sandwich with sausage, egg, and cheese.
But smothered in this gravy, you'd genuinely never guess there are vegetables hiding in there. It's the easiest way I know to trick picky eaters into a healthier version of comfort food.
Ingredients
For the Cauliflower Sausage Gravy
- 2 (10 oz.) bags steam-in-a-bag cauliflower
- 1 cup almond milk
- 1 lb. ground sausage
- 1/2 teaspoon pink Himalayan or sea salt
For the Almond Flour Biscuits
- 2 cups almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/3 cup butter, melted (use plant butter for dairy-free)
- 1/4 cup sour cream (optional)
Instructions
- 1Preheat the oven to 350 degrees. Brown the sausage thoroughly in a skillet over medium heat.
- 2While the sausage cooks, microwave the cauliflower according to package directions (about 4 minutes makes it easier to puree). Combine the cauliflower, almond milk, and salt in a blender and puree until smooth.
- 3Pour the cauliflower puree into the skillet with the sausage (don't drain the sausage) and stir together well.
- 4For the biscuits, combine all ingredients in a bowl and beat at medium speed just until combined. Scoop onto a silicone-lined baking sheet and bake for about 15-16 minutes, until golden and firm.
- 5Smother the warm biscuits with the sausage gravy and serve.
Tips
- Silicone baking mats distribute heat more evenly than parchment for biscuits, rolls, and cookies — worth the investment if you bake a lot.
