Easy Meatloaf
A simple, no onion-soup-mix meatloaf topped with a tangy ketchup glaze — my own spin on the family recipe that made a meatloaf skeptic out of my husband into a fan.

Meatloaf gets a bad rap — there's a reason it's the punchline in "A Christmas Story" — but it was never like that growing up in our house. My mom's version was always a family favorite, and even my husband, who wasn't expecting much the first time he tried it, cleaned his plate and admitted it was good.
Since then, I've worked out my own version without the onion soup mix my mom always used, and after a few rounds of tweaking, my husband and kids gave it their full approval.
Ingredients
For the Meatloaf
- 2 pounds ground beef (80-85%)
- 1 egg
- 1 teaspoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon Worcestershire sauce
- 1 cup milk (or 1 cup beef bone broth for dairy-free)
- 1 cup seasoned Panko breadcrumbs (or pork panko for gluten-free/low-carb)
- 1/3 cup ketchup
For the Topping
- 1/3 cup ketchup
- 2 tablespoons brown sugar (optional)
- 1 tablespoon Dijon mustard
Instructions
- 1Preheat oven to 350 degrees.
- 2Combine all of the meatloaf ingredients in a bowl and mix well with your hands.
- 3Form the mixture into a loaf in a meatloaf pan, or in a greased 9x13 inch baking dish.
- 4Stir together the topping ingredients and brush over the top of the meatloaf.
- 5Bake for 1 hour to 1 hour 20 minutes, until the juices run clear or an internal thermometer reads 155 degrees F.
- 6Let rest for about 10 minutes before serving.
Tips
- Make it low-carb, dairy-free, and gluten-free: swap in pork panko for the breadcrumbs and 1 cup beef bone broth in place of the milk.
