Every household needs a handful of go-to dinners that come together fast, and this one earns its spot on repeat at our table. As long as we're not eating it a dozen times a week, everyone's excited to dig in.

I'll admit it — sometimes I cheat when it comes to dinner. My mom taught me to improvise, and I love doctoring up simple recipes just enough that people think there were hours of labor involved. "Oh wow, she slaved all day over this!" Suckers.

Pair these with a cheesy starch and something green, and dinner's basically done. Mac 'n cheese, scalloped potatoes, or cheesy rice on one side, broccoli or a salad on the other — that's a plate everyone in my house will clear.

Ingredients

  • 4 thick cut boneless pork chops
  • 2 tbsp. mayonnaise
  • 1/4 cup grated parmesan cheese
  • 2 tbsp. seasoned breadcrumbs (use GF breadcrumbs to make this gluten-free)

Instructions

  1. 1Preheat the oven to 375°F. Lay the pork chops in a 9x13 inch baking dish.
  2. 2Brush 1/2 tablespoon of mayonnaise on top of each pork chop.
  3. 3Sprinkle 1 tablespoon of parmesan over each, followed by 1/2 tablespoon of breadcrumbs.
  4. 4Bake for 30-35 minutes, or until the pork chops reach an internal temperature of at least 145°F and are lightly browned on top.
