The second the temperature jumps into the 90s here, I know it's time to start playing in the kitchen with freeze pops. While working on recipes for my next cookbook, I couldn't resist the idea of making a few adult-only versions for the grown-ups who need something cold after a long, hot day.

My six-year-old was thrilled when he saw me blending up freeze pops, until I broke the news that these particular ones were just for the adults. He got over it fast once he understood why. The best part about all eight of these flavors is how little effort they take — blend, bag, and freeze. If you're short on patience, most of these work just as well as a boozy slushie straight out of the blender.

Ingredients

Caribbean Freeze Pops

  • 10 oz. frozen pineapple chunks
  • 2 oz. coconut rum
  • 2 oz. light rum
  • 2 oz. blue curacao
  • 4 oz. sweet and sour mix

Apple Martini Freeze Pops

  • 12 oz. frozen apple juice concentrate
  • 4 oz. sour apple pucker
  • 4 oz. vodka
  • 12 oz. water

Mai Tai Freeze Pops

  • 10 oz. frozen pineapple chunks
  • 4 oz. coconut rum
  • 2 oz. light rum
  • 2 oz. triple sec
  • 1 1/2 teaspoons grenadine syrup

Margarita Freeze Pops

  • 12 oz. margarita mix
  • 12 oz. water
  • 6 oz. tequila
  • 2 oz. triple sec

Pina Colada Freeze Pops

  • 10 oz. frozen pineapple chunks
  • 6 oz. light rum
  • 4 oz. coconut milk
  • 2 tablespoons granulated sugar

Royal Flush Freeze Pops

  • 4 oz. frozen peaches
  • 4 oz. Crown Royal
  • 2 oz. coconut rum
  • 6 oz. cranberry juice
  • 4 oz. orange juice

Sangria Freeze Pops

  • 10 oz. frozen tropical fruit
  • 6 oz. dry red wine
  • 2 oz. brandy
  • 4 oz. orange juice

Strawberry Daiquiri Freeze Pops

  • 10 oz. frozen strawberries
  • 6 oz. light rum
  • 2 oz. lemon-lime flavored soda
  • 2 tablespoons granulated sugar

Instructions

  1. 1For each flavor, combine all of that flavor's ingredients in a blender and puree until smooth (for the Margarita Freeze Pops, just stir everything together in a pitcher — no blending needed).
  2. 2Using a funnel, pour the mixture into plastic freeze pop bags, filling to the fill line, then squeeze out the air and seal tightly.
  3. 3Lay the bags flat in the freezer and freeze completely, at least 6 hours or overnight.

Storage & Reheating

These are strictly for adults — keep them stored separately from any kid-friendly freeze pops in the freezer so there's no mix-up.
