Superfood Protein Smoothie

I'm not naturally drawn to eating a big pile of spinach and blueberries, even knowing how good those superfoods are for me — but blending them into a smoothie is a completely different story, and I genuinely feel better every time I drink this one.
It's become my go-to breakfast or lunch on busy weekdays, especially when I'm only feeding myself and need something I can sip on the move. The mix of protein, healthy fat, and fiber keeps me full and energized for hours, and I love batching a few at once into glass bottles for the week ahead.
Ingredients
- 10 oz. cold water, green juice, or non-dairy milk
- 1 cup frozen organic blueberries
- 1/2 teaspoon matcha powder
- 1/4 cup ground flaxseed/chia seed blend
- 1 scoop super greens powder
- 1 serving plant-based protein powder (vanilla is my favorite here)
- 2 large handfuls leafy greens (spinach, kale, collards, etc.)
Instructions
- 1Combine all ingredients in a blender and puree for 1-2 minutes, until smooth.
- 2Pour into a big cup and serve immediately, or store in a sealed glass bottle in the fridge for a grab-and-go breakfast or lunch.
Tips
- I use vanilla protein powder here, but chocolate is my go-to when I'm making a peanut butter banana smoothie instead.
