Mini Pizzas
English muffin pizzas topped however everyone likes them — a quick, kid-friendly party appetizer straight from my first cookbook.

Football and social gatherings mean two things to me: pizza and alcohol. With the Super Bowl always around the corner, this is one of my favorite easy, filling appetizers to have on hand — and what kid doesn't like pizza?
You can let everyone customize their own without ordering six different pies, and it comes together fast. This one's actually in my first cookbook, Party Time!, alongside over a hundred other recipes built for entertaining — hot and cold appetizers, kid-friendly and adult beverages, and desserts for every kind of crowd.
Ingredients
- 12 English muffins
- 14 oz. jar pizza sauce
- 3 cups grated mozzarella cheese
- 4 oz. package mini pepperoni slices, onions, cooked sausage, bell peppers, mushrooms, etc.
Instructions
- 1Preheat the oven to 350 degrees.
- 2Split each muffin in half and lay each piece split-side up on cookie sheets.
- 3Spread 1 tablespoon of pizza sauce on each piece, followed by 2 tablespoons of mozzarella and your desired toppings.
- 4Bake for 12-15 minutes, or until the cheese is melted. Serve warm with a really big smile.
