This is one of the handful of appetizer staples that shows up at pretty much every party I throw. When I'm trying to keep the menu simple and just pick three things, this one always makes the cut. Pair it with a veggie tray, some chips and dip, and a dessert, and your guests have plenty to snack on without anyone getting overwhelmed.
Most people try a little the first time they see it, but they always come back for seconds — and then fuss at me because they can't stop eating it.
This recipe comes straight from my first cookbook, Party Time!, and it's stayed a go-to ever since.
Ingredients
- 5 oz. can chicken, drained
- 0.4 oz. packet ranch dressing mix
- 2 (8 oz.) packages cream cheese, softened
Instructions
- 1Combine all ingredients in a mixing bowl and beat at medium speed for 1-2 minutes, until well blended.
- 2Lay a large piece of plastic wrap on the counter and spoon the mixture onto it. Wrap tightly, shaping into a ball as you go.
- 3Refrigerate for at least 2 hours before serving. Let sit out for about 30 minutes before serving so it softens slightly, then serve with buttered crackers.
Tips
- For a low-carb or keto version, serve with cucumber slices, celery, or keto-friendly crackers instead.
