Stuffed Mushrooms

I was deep in the middle of updating my Party Time! cookbook — adding over 100 new recipes to bring the whole book past 200 — when I realized stuffed mushrooms had never made the cut. That was a mistake I needed to fix immediately.

Good gluten-free appetizers can be surprisingly hard to find, so I love that this filling is naturally GF, breadcrumbs and all optional. My husband and kids aren't exactly mushroom fans, but my mom and mother-in-law happily volunteer as taste-testers every time, and two grandmothers giving their stamp of approval is worth more than gold in my book.

Ingredients

  • 12 whole fresh mushrooms
  • 1 1/2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 4 oz. cream cheese, softened
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 teaspoon onion powder
  • Breadcrumbs, for topping (optional)

Instructions

  1. 1Preheat oven to 350 degrees. Grease a baking sheet with cooking spray and set aside.
  2. 2Wipe the mushrooms clean with a damp paper towel. Carefully remove the stems and place the caps on the baking sheet. Finely chop the stems, discarding the tough ends.
  3. 3Heat the butter in a skillet over medium heat. Add the chopped stems and cook until slightly tender, then add the garlic and continue cooking until the moisture has evaporated.
  4. 4In a medium mixing bowl, combine the cream cheese, parmesan, onion powder, and mushroom saute. Beat with an electric mixer until well blended.
  5. 5Pipe the filling into a pastry bag (or use a spoon) and fill each mushroom cap generously. Sprinkle with breadcrumbs, if desired.
  6. 6Bake for about 20 minutes and serve warm.

Tips

  • To make these dairy-free/vegan: use plant butter, vegan cream cheese, and vegan parmesan, then top with almond flour instead of breadcrumbs.
