Butterbeer Mudslide
A blended, boozy milkshake of a cocktail with butterscotch schnapps, Irish cream, and vanilla ice cream — pure Harry Potter fan bait.

My sister-in-law is a huge Harry Potter fan, so the second I mentioned making mudslides inspired by butterbeer, she appointed herself head of the taste-testing crew. My first batch used a caramel-flavored vodka I'd picked up on a whim, and it was good, but when I ran out and had to make a second round with just the Butterscotch Schnapps and Irish Cream, everyone agreed that version won.
I was genuinely surprised, and I had to physically pull myself away from my glass before I drank the whole thing without sharing. "Take it away!" I begged. They happily obliged.
This one blends up like a boozy milkshake, and it's dangerously easy to drink more of than you planned.
Ingredients
- 1 pint vanilla ice cream
- 3 oz. Butterscotch Schnapps
- 2 oz. Irish Cream
- 1 tablespoon butterscotch sauce
- 1 tablespoon caramel sauce
- whipped cream and more sauce, for garnish
Instructions
- 1Combine the ice cream, liquors, and sauces in a blender and puree until smooth.
- 2Pour into glasses and garnish with whipped cream and a drizzle of butterscotch or caramel sauce.
